Description

Cooked smoked sausages are cooked and then smoked or smoke-cooked. They are eaten hot or cold, but need to be refrigerated. Examples include kielbasa and mortadella. Some are slow cooked while smoking, in which case the process takes several days or longer.



Smoked sausages—such as andouille and kielbasa—are, as their name suggests, smoked to cook them. They are hung in a smoker or smoke house where a cool fire is tended to burn slowly and to produce a copious amount of smoke that cooks, flavours, and preserves the sausages

Description

Cooked sausages—such as wieners, frankfurters, and many German-style "wursts" are usually made with smooth, even pureed fillings. Sometimes the fillings are partially cooked before being stuffed into the casing, but in all cases, the sausage is cooked after filling.  Also meat that has not been cured or smoked, but has been precooked like blood sausage, Bockwurst, Braunschweiger, Bratwurst, Liver sausage, and Thuringer are included in this group of sausages.



Cooked sausages ( wieners / bologna ) constitute the greatest tonnage of sausage produced in Canada and the United States.



Frankfurters, Vienna sausage, hotdogs and wieners are all names used interchangeably and with a similar meat formulation. This fully cooked sausage is a combination of beef and pork, and is usually served hot. Both wieners and Vienna- style sausages take their names from the city of Vienna, Austria, and Frankfurters from the city of Frankfurt, Germany. Sizes range from big dinner frankfurters to tiny cocktail size, and may be skinless or with natural casings.
