Collagen Sausage Casings
Collagen casings are dry casings made up of fibers of edible collagen (protein) that are derived from bovine (beef). These edible casings provide excellent smoke and moisture permeability, and consist stuffing size. Collagen casings are recommended for fresh, smoked and dry cured sausage products.
Prior to using, collagen casings (except for the small diameter sizes) are to be soaked or flushed for 20-30 minutes in warm water (26°C) with 10-15% salt concentration. This will improve the elasticity and ‘machinability’ of the casings.
Cut pieces (tied and looped) are available in a variety of diameter sizes ranging from 43mm to 120 mm. The standard cut length is 60 cm (24”), with custom lengths available by special order.

Collagen Rounds are curved collagen casings designed for bologna, kielbasa, polish sausage and ring sausage. Sizes range from 38mm to 52mm in diameter, and are available in 20 m bundles or shirred sticks. Our most popular colour is natural, with smoke and mahogany colours also available.

Small Caliber Collagen casings are specially formulated with the added strength needed for processed/smoked pepperettes and snack sticks, in diameter sizes 17mm to 30 mm. Small sizes for fresh sausage applications are also available. The sticks are packed in small boxes (caddy) to maximize shelf life.
