MALABAR’S HERBS AND SPICES

Most of the spices used in processed meats come from the “Butcher’s Dozen”. The spices include Mustard, Black Pepper, White Pepper, Red Pepper (Cayenne Pepper), Paprika, Chili Pepper, Nutmeg, Mace, Coriander, Garlic, Sage, Cumin and Fennel. The unique flavours in different varieties of sausages and meat products are the direct result of blending these spices into an almost endless number of unique combinations. Malabar specializes in creating and supplying blends to processors across the country, including blend matching, sourcing, storing, and HACCP compliance. † Chipotle Pepper: This is a fresh chili pepper that takes on a wonderful smoky flavour when roasted or charred over a flame. It has a wrinkled, dark brown skin and a smoky, sweet, almost chocolaty flavor. It also has less than half the heat of Cayenne Pepper.

‡ Be careful not to confuse ground Chili Pepper with ‘Chili Powder’. Chili Powder is a blend of 6-10 different spices including turmeric, cumin and coriander.
