Sausage Casings


Cellulose Sausage Casings

These casings are manufactured from a straight chain polysaccharide found as the primary component of wood, and also straw and cotton. These casings are non-edible, and are to be peeled off before eating.

Fibrous cellulose casings are formed by adding regenerated cellulose fibers to allow for increased water vapor and smoke permeability. These casings are to be soaked for 15-30 minutes before they are stuffed to improve flexibility, which allows them to be stuffed to their proper diameter. The consistent uniformity of size makes the fibrous casing ideal for all types of sliced sausage products including bologna, cooked salami, and other smoked, cold cut meat products.

We stock a range of sizes from diameters of 60mm to 120 mm, in colours of white, brown, black and also clear. Cut pieces, tied and looped, in lengths of 60cm (24”) are in stock, with shirred sticks and reels also available by special order.

Coated Fibrous Casings (Moisture Proof) are fibrous casings with an added inside (or outside) coated plastic layer, to provide excellent water vapor and smoke protection. The plastic layer provides added shelf life, and improved yields, as there is no weight loss in cooking, storage, or distribution.

The coated fibrous casings also must be soaked for 30 minutes in warm water (20-25’C). Water-cooling is also required immediately after cooking. These casings are recommended for ham sausage, mortadella, krakowska, liver sausage, and other cooked sausage products.

Coated fibrous casings are available in cut pieces, shirred sticks, and rolls.
