The latest supply shortage of fresh garlic in China has caused prices to climb upwards.
As a result, speculators are holding onto their current supplies with the prospect of larger profits
on the horizon.
The cost of garlic bulbs from China has increased 85% to 13.75 yuan (Approx. $2.74 CAD)
per kilogram over the last 12 months. In the U.S. prices have shot up 60%. With Chinese imports accounting for 80% of the garlic supply in the U.S., market prices are being watched closely.
